Pork Chops with Apple Rings

I had a few granny smith apples in the fridge and they were getting a bit soft. As many of you already know, when I create recipes I often just use what I have. You will find a wonderful mix of sweet and savory in this easy Pork and Apple Rings recipe. I know it doesn’t look like “pretty food” but it is pretty tasty food just the same xo

This is a low sugar recipe, if you are not on a restricted diet please see Katie’s Tid Bits below*

What You Need
4-6 Boneless pork tenderloin chops ( cut 1/4 inch thick)
3-4 Medium granny smith apples ( peeled and seeded
1 Tbsp. All purpose flour
2 Tbsp. brown sugar substitute, I use Splenda ( or “real” brown sugar)
1/4 Cup sugar substitute, I use Splenda ( or “real sugar”)
2 tsp. Cinnamon ( dry ground)
1/4 tsp. Nutmeg ( dry ground)
1-2 tsp. Ground black pepper
2 Tbsp. Dairy free margarine ( or butter)
2 Tbsp. Canola oil
Non stick cooking spray
Skillet large enough to hold all of the chops
Baking dish ( large enough to hold all of the pork chops)
Apple peeler
Bowl
Cookie sheet ( baking sheet)
Meat thermometer

Before You Start -preheat oven to 425°, spray inside of baking dish with cooking spray.
Lets Make It! Add canola oil to skillet, heat over medium high heat, sprinkle pork chops ( both sides) with ground pepper. Place pork chops in skillet and lightly brown on both sides. You should only need to turn them once ( takes about 2 minutes. In a mixing bowl combine flour, sugar substitutes, cinnamon and nutmeg. Stir to combine. Remove pork chops from skillet and place into prepared baking dish. Slice apple rings about ¼ inch thick and toss them into the cinnamon mixture, coat both sides. Place coated apple rings on top of each pork chop (one or two for each pork chop). Add random dollops of margarine ( butter) on top. Place baking dish on cookie sheet and bake for 15-20 minutes until browned and pork reaches 155 °
Serves 4
*Katie’s tid bits– reserve a little of the cinnamon sugar mixture and melt it with some margarine ( or butter) and drizzle over the top. In the interest of full disclosure, my hubby prefers the apple rings baked separately. But either way it tastes yummy to me. If you are not on a restricted diet, use “real sugar” and butter instead of margarine.
